Saundersfoot chef wins award

Pembrokeshire has proved its culinary skill and reputation once more as Saundersfoot chef Andrew Tabberner has won the Junior Chef of Wales award. The 22 year old currently works as chef de partie at the newly opened Coast restaurant run by Head Chef Will Holland, who himself comes from Ludlow restaurant La Bécasse, where he earned the establishment a coveted Michelin star.

Regular visitors of Saundersfoot rental cottages are likely to already be aware of the area’s culinary reputation and this newly claimed prestigious title just adds to the accolades that Coast has achieved since its opening in April last year.

Culinary skill in Saundersfoot

Tabberner’s win did not come easily despite his evident talent, having to battle against four other finalists. He described the competition in this article as, “I feel ecstatic but also drained. It’s the best feeling and I couldn’t have done it without the help of everyone at Coast Restaurant”.

Tabberner’s winning menu? A main course of Welsh pork tasting plate, complete with smoked bacon rolled tenderloin, braised neck, stuffed cabbage and crispy ear, all served with cider fondant potato, savoy cabbage, apple jelly and cider reduction. This was finished off with a dessert of poached forced rhubarb, white chocolate and vanilla cheesecake with ginger biscuit base, champagne jelly, white chocolate tuille and rhubarb puree. No wonder it impressed judges Colin Gray, Culinary Association of Wales president, chairman John Retallick and Michelin star chef Shaun Hill of the Walnut Tree Inn, Abergavenny.

This was all concocted with the help of his commis chef for the competition, TV chef Will Holland himself and, as is clear from the above tweet, he couldn’t have been more proud.
